Myasnikov Daniil 2c61cb2196 docs(release): document UI release branch process for new minors ...

Explains that cutting vX.Y.0 requires creating cozystack-ui/release-X.Y
and pinning CONSOLE_BRANCH in packages/system/dashboard/Makefile.
Without this step, patch builds clone cozystack-ui@main and can pull
in unreleased UI features.
