Aleksei Sviridkin 7532cf59f9 chore(packages/apps/clickhouse): bump clickhouse-backup tool to 2.7.2

Rebuilds the altinity-clickhouse-backup sidecar image off the upstream
altinity/clickhouse-backup 2.6.32 -> 2.7.2 release (multi-arch) and pins the
new digest. Picks up the published security fixes in the backup tool. The
clickhouse-server version (24.9.2) is intentionally left as-is: moving it is a
multi-major server upgrade, out of scope for this maintenance bump.

Extends the existing backup helm-unittest to assert the sidecar image tag, so
the bump is guarded against regressions.

Adaptations:
- images/altinity-clickhouse-backup/Dockerfile: FROM altinity/clickhouse-backup 2.6.32 -> 2.7.2
- images/altinity-clickhouse-backup.tag: pin rebuilt multi-arch image digest
- tests/backup_test.yaml: assert the backup sidecar image tag
