Timofei Larkin 66a20d9a0a docs(postgres): describe minted passwords ...

The README told users to read a password from <release>-credentials,
which the chart no longer renders, the createRole text named the init
job as the place a planted role is refused, and the restore notes
described the init job applying chart-generated passwords. They now
describe the mint, the pre-upgrade check, how a restored copy gets its
passwords, and why a downgrade past the conversion is unsupported.
